Thank you i will let you know how it works out with variable tank I will do it when I am off in two weeks just to see how well it works out I used it on a chilian carmenère wine I had made in a solid tank and it worked well the only down fault to it is I can not see inside the tank to know how it was doing but I was able to check it with the gauge and once I was down to a 30 inch vacuum I let it sit there for 30 minutes then did a test with the hydrometer tube and it worked out everyday is a learning experience. Let’s start with Vacuum pumping. Even if we assume a vacuum pumped half bottle of wine loses something over time it is quite a different thing when vacuuming a carboy. First if the wine is relatively new it probably has Co2 which vacuuming removes not a bad thing. If the wine does not the wine is subjected to the vacuum for a very short period of time. So I cannot see any downside to vacuum pumping. On the other hand an older wine subject to a vacuum over 24 hours could be a different story. First does it happen to all wines? NO or they would not be selling those contraptions and high end wine bars and restaurants would not be using them when selling wine by the glass. Can it be detrimental to a particular wine? I guess so but why is too in the weeds for me to understand.

or core a hole to the recommended diameter and depth using the fixture as a template.  Clean the hole thoroughly with a hole cleaning brush. Remove the debris with a hand pump, compressed air, or vacuum.
the AnkaScrew™ through the fixture and screw it into the hole with either a socket wrench or an impact wrench using slight pressure until the self-tapping action begins.
the AnkaScrew™ until the fixture is held firm. If resistance is experienced when tightening, unscrew the anchor one turn and re-tighten. Ensure that you do not over tighten.
